this is comparison between 2 universities know so what is the use of "that"

The intended comparison  is between the pedagogy  of both universities hence correct sentence should be “The pedagogy of  American universities  is far better  than  that of Asian universities .”

Dear student,
because no further use of pedagogy is not mentioned in sentence Hence that is used.
